If you are filling out a Cutsheet as a Buyer and a cut you expected is not on the list, the usual cause is not a missing option. It is that your Split is set to the wrong type.
Why this happens
Every Split has a type: a whole animal, a half, a quarter, and so on. The Cutsheet only offers you the cuts that actually come with your portion. Ribs are the most common example. If your Split is set to a portion that does not include the ribs, they will not appear as an option no matter how far you scroll.
So a missing cut is almost always a signal that the Split type on your order does not match what you actually bought.
How to get it fixed
Buyers cannot change their own Split type. Ask the person you bought the animal from:
If you bought your share from a farmer or rancher, contact your Producer.
If you booked directly with the plant, contact your Processor.
Tell them which cuts you expected and what you actually purchased, for example a half rather than a quarter. They can change the Split type on their side, and the correct cuts will then appear on your Cutsheet.
After the Split type is corrected
Reopen your order and click Fill in Cutsheet again.
Check your selections from top to bottom. Changing the Split type can change which options are available, so anything you had already chosen is worth reviewing.
Remember that anything you do not select is sent to Trim or ground.
One thing to rule out first
If you cannot see your order at all, that is a different problem. Log in with the exact email address or phone number the request was sent to. If your Cutsheet link came by text, signing in with your email will not show your order.
