SOP: Set Up and Migrate Data in the New Cutsheet Builder

Objective
This SOP explains how to move legacy processor capability data into the new Cutsheet Builder, review the imported catalog, and begin editing cutsheets so they match your current business needs. It is designed to help a team member quickly get started and make the first round of updates with confidence.
Key Steps
1. Confirm legacy data is still available 0:00
Open the system and verify that Capabilities (Legacy) and Cutsheets (Legacy) are still visible. They're still under the Setting Tab.
Note that the new Cutsheet tab no longer appears in Settings.
Use this area only as a reference until legacy tools are fully removed.
2. Open the new Cutsheet Builder 0:16
Navigate to Cutsheet Builder to access the new cutsheet workflow.
Use the builder dropdown to work within the new cutsheet system.
Select the appropriate processor/account before making changes.
3. Review the initial Cutsheet Builder state 0:28
Expect the builder to be empty the first time you open it.
This is normal if no catalog or cutsheet data has been created yet.
Use this as the starting point for building your catalog structure.
4. Build the catalog structure 0:44
IF you want to build from scratch:
Enter all groups first, such as primals.
Add the cuts under each group.
Add trim and specifications as needed.
Organize the catalog in a way that matches how customers should select products.
5. Migrate legacy data into the new system 0:53
Go to Settings within Cutsheets and choose Migrate Legacy Data.
Use this to import:
Groups
Cuts
Specifications
Other information from the legacy processor capability system
Existing Cutsheets and assignment rules
Select the correct legacy source, such as Custom Exempt or USDA, before migrating.
Click Migrate to complete the import.
6. Verify what was created during migration 1:25
Review the migration results to confirm the system created the expected items.
Check the number of:
Groups
Cuts
Specifications
Questionnaires
Assignment rules
If multiple questionnaires exist in the legacy setup, confirm that each one was created separately.
7. Refresh and inspect the imported catalog 1:59
Refresh the page after migration.
Review the newly created groups in the catalog, such as Chuck, Arm, and Brisket.
Confirm that the imported structure matches the legacy data, even if it is not yet in the final desired format.
8. Edit groups and cuts as needed 2:19
Expect to make edits after migration because the imported structure may be too detailed or not organized the way you want.
Use the pencil icon to edit a group or cut.
Use the trash icon to delete a cut.
Review each group and decide whether to keep, merge, rename, or simplify it.
9. Review the imported Cutsheet in Cutsheet Builder 2:58
Open Cutsheet Builder to confirm that a Cutsheet was created.
Review the questionnaire layout and verify that specifications carried over correctly.
Check the first section of the questionnaire to see what was imported from the legacy version.
10. Update specifications that did not transfer correctly 3:10
Review each specification carefully, starting with items like Ground Beef Fat Percentage and Ground Beef Pound.
Confirm the input type, available choices, and pricing behavior.
If a value did not transfer correctly, add or correct it manually.
Save changes after updating the specification so customers see the correct options.
11. Configure package and image options 4:01
Review package-related options and confirm they are set up correctly.
Upload or download images for each option if visual selection will help customers.
Add descriptions where needed, especially for specifications that benefit from explanation.
For package selections, consider using photos that show one pack, two packs, and other variations.
12. Save progress and continue setup later 4:22
Save all changes before leaving each page.
Pause setup if additional training or configuration is needed.
Cautionary Notes
Do not assume legacy data transferred perfectly. Always verify groups, cuts, specifications, and questionnaires after migration.
Imported structures may need cleanup. The catalog may contain too many groups or cuts and may need simplification.
Check pricing and input behavior carefully. Some fields may not carry over correctly, such as actual weight or charge settings.
Use delete carefully. The trash icon removes a cut, so confirm before deleting anything important.
Confirm the correct legacy source before migrating to avoid importing the wrong dataset.
Tips for Efficiency
Start with Migrate Legacy Data instead of building everything manually.
Use the imported legacy structure as a draft, then refine it to match your preferred catalog layout.
Review one group at a time to make cleanup easier.
Add images only where they improve customer decision-making; not every specification needs a photo.
Save changes frequently while editing specifications and cuts to avoid losing work.
